EZ Spinach Dip
- 10 oz frozen spinach-Thawed
- 1/2 cup green onion(use tops only)
- 1/2 teaspoon salt
- 1/1 teaspoon pepper
- 1 cup mayonnaise
- 1/2 cup sour cream (optional)
- 1 teaspoon lemon juice
- pinch red pepper flakes
- salt and pepper to taste
Squeeze all juice out of thawed spinach.Mix with remaining ingredients. Serve with fresh vegetable or pita bread chips.
This should be prepare 5-6 hours in advance

Love this recipe, but will probably use arugula which is growin like a week in my garden. Let you know how it turns out.
This is a good idea but be careful, Arugula can change color and my become bitter.

Thanks for the advice. I only ever eat it raw and usually the day I pick it. An Asian friend tells me it’s good cooked so I have been thinking about trying it in green gnocchi. As to the Spinach Dip, I will definitely start with a small portion and see how it turns out.

The arugula dip came out fine but can’t be sure how stable it is, it was gone in 2 days. Like most cooks, I altered the recipe. I cut back on salt and Mayonnase and substituted Dijoin for about half the mayo. http://coffeepotcooking.wordpress.com/2012/04/15/arugula-party-dip/
