EZ Mediterranean Skewered Fish Recipe

1/4 cup lemon juice

1/4 lime juice

1/4 cup olive oil

1 clove garlic, minced

1 teaspoon basil

1 teaspoon oregano

1 teaspoon salt

1/4 teaspoon pepper, freshly ground

2 pounds fish fillet, 1 1/2 inch thick

2 bell peppers, seeded and cut in 1 inch pieces

2 oranges, cut in chunks

 

Combine lemon and lime juices in 2-quart glass bowl. Whisk in oil and spices. Cut fish in 1 1/2 inch cubes; add cubes to marinade and toss well. Let stand at room temperature 2 hours; stir occasionally. Drain fish and reserve marinade.

Heat oven to 550 degrees Fahrenheit or broil. Thread fish cubes alternately with green pepper and orange chunks on skewers. Place skewers on rack in 15 x 10 x 1 inch pan. Broil 4 to 5 inches from heat; turning a quarter turn 3 times and basting with marinade about 6 to 8 times. Heat remaining marinade and serve with fish.

3rd Place at Taste of Henry Charity Event

It turns out that Eat at E’s got 3rd place for Rookie of the Year at the Taste of Henry. Winning was not our goal, however, we’re glad that we got a chance to participate and help raise money for A Friend’s House, which is a charity for abused and neglected children.

What we served was shrimp and grits and people loved it.

 

EZ Egg Drop Soup alla Romana Recipe

2 qt beef  broth seasoned

4 eggs

1/2 cup grated Parmesan

Salt an pepper to taste

 

Beat the egg with 2 tablespoon Parmesan. Bring the broth to a slow simmer,drop the egg and Parmesan mixture into the broth while whisking vigorously so that the egg becomes solid drop. Add remainder of the Parmesan,mix well and serve immediately.

EZ Hot Curried Fruit Recipe

1/2 cup butter

2 tablespoon curry powder

1 cup dark brown sugar

20 oz canned pear halves

20 oz  canned peach halves

20 oz canned pineapple chunks in natural juice

4 oz maraschino cherries

Melt butter in sauce pan.Sprinkle curry powder into butter and let bubble for a minute.Dissolve sugar in butter and a little water if needed. Arrange fruit in baking dish cit side up and pour sauce over and around fruit. Bake at 350 F for 50-60 minutes.

EZ Butter Cookies Recipe

1    cup flour sifted

1/2 cup sugar

1/2 cup butter softened

Combine the above thoroughly add      1   egg yolk

1 teaspoon vanilla or rum

Mix together until dough can be shaped into a ball.Roll into log 2 inches in diameter. Chill for 3 hours.Cut in half lengthwise. Slice into 1/.8 inch slices and bake at 350 F on ungreased baking sheet 3/4 inch apart for 8 minutes
